Made the old-fashioned way from the nutrient-rich hulls (pods) of purple hull peas—not the peas themselves—this homemade jelly has long been known as a “poor man’s grape jelly.” When the hulls are slowly boiled, they produce a deep purple juice that, when combined with sugar and pectin, tastes remarkably like classic Concord grape jelly.
